I forgot to mention in the video but you need to acquire the "Gentleman's Suit" from Thieves Landing to be able to cheat at poker.

Here is a summary for how to duel in Red Dead Redemption. Once you draw your weapon, a cross-hair will appear on the screen, flashing from red to white when on the body of your opponent in the duel. The key to winning the duel is to click the right-trigger when the cross-hair turns white, filling up a meter on the bottom-right of the screen. After a few seconds, the duelist with more in their bar wins.

Now there is a way to gain more fame and not kill your opponent, but involves a little more control and is much harder to do. It involves targeting the weapon of your opponent, hitting right-trigger when the cross-hair turns white on the weapon.
